What’s the origin of the Autumn Falls? I wanted to create a drink for our menu involving gin; I began researching gin and the different types of craft cocktail trends. I found a few variations, began experimenting with those variations and came up with the combination that I liked. How would you describe the taste to someone who hasn’t had this before? I would describe Autumn Falls as a rosemary-forward, that is light on the palate with a hint of an herbal finish. What would be the key component in this drink? There isn’t one key component, I believe that all of the ingredients blend well to create a smooth, rosemary-forward experience. Why did you choose Nolet's gin for this cocktail? After doing research, I found that Nolet, being a floral and fruit-forward gin, gave the drink a distinct well-balance flavor, which is exatly what I was looking for in Autumn Falls. What reactions do you get from customers when they try this cocktail for the first time? They usually don’t believe they are drinking gin, which gives me the opportunity to introduce the customer to Nolet and the uniqueness it brings to the gin family. Secondly, they are amazed with how refreshing, light and crisp it tastes. Do you have other house-made simple syrups? Yes, we have three house-made simple syrups which are turbinado, agave and brown sugar. In addition, we have approximately 10 flavored house-made syrups, such as rosemary, ginger, arrogant bastard, and orgreat. What are some good dishes to pair this drink with? A good dish, in my opinion, would be a chicken based dish or a white fish, such as tilapia.

What kind of experience can someone get at Harrah's? When visiting Harrah’s, we want you to have an all-around experience, a one stop shop. There are six different bars with different themes, eight unique food establishments, gambling (of course), shopping, swimming and always, great customer service. What makes Spiked stand out from all the other establishments inside the resort? What makes Spiked stand out from the rest of the establishments is the creativity and hard work of our Property Mixologist, Jeff Lambkin, who has been the driving force of our bar. We focus on doing our best to make every drink better, whether it be a traditional recipe of a craft cocktail or one of our contemporary creations. We break down each recipe and find ways to improve or add value to them. One of our goals is to create a proper, suitable recipe that we are proud to serve. By using house-made syrups and shrubs we can utilize fresh ingredients in a high volume atmosphere. By creating our own infusions this allows us to replace inferior examples of other brands, or to create a flavor combination when we are unable to find a quality product. At Spiked we are not interested in creating a vibe of elitism, but rather educating our guest. Nothing says happiness, like a guest leaving our bar a tad bit more informed on their favorite spirit and or favorite drink.

I am not a native of San Diego, I grew up in the Palm Springs area. How long have you been in San Diego? I’ve been in the San Diego area since 2013. How did you get into bartending? I was in college and was working as a server, an opening became available for a bartender, and well, here I am, college degree in one hand and a mixing glass in the other. When you’re not mixing drinks, what are you doing on your spare time? When I am not bartending, I am running (always looking for my next trail experience), hiking, 5K’s, just about anything outdoors.
