On this edition of In the Kitchen, we chat with the owner of City Tacos, Gerry Torres, about the popularity of their tacos and the demand for more locations throughout the county.

Are you from San Diego?

I’ve lived in San Diego more than half my life, but I am originally from Mexico City.

What inspired you to become a restaurant owner?

I love the hospitality industry and have been involved in it all my life. I’ve worked in basically every front of house position within the industry and my love for working in restaurants grew to me wanting to open my own concept. Why do you think City Tacos has been so successful and popular with diners in San Diego?

I think it’s a combination of factors including service, high quality ingredients, value and diversity. We have our own style and aim for greatness every time a taco is created and/or prepared. What is your thought process when you're coming adding new tacos to the menu?

Flavor! For me, it is vital to have something that tastes great. For example, when our chefs are asked to create the Taco of the Month, a taste test with our guests takes place and if they all love it, then it becomes the next month’s featured taco. If it gains popularity with our guests, then we might even put it into our regular menu then the cycle begins again. If you haven’t tried the February Caramel Shrimp taco, with brown sugar caramelized shrimp, white rice, grilled asadero cheese, fried leeks and pickled red onions, I highly recommend it! What is your favorite taco on the menu?

Pescado, Chile Relleno and Squash Blossom. Haha, sorry that’s three favorites but it's too tough to choose between those three for me.

What's your favorite ingredient to cook with?

Veggies, I love when veggies can turn into an entree and unexpected flavors are achieved without proteins!

What is one culinary trend you're noticing in San Diego?

People are seeking out healthier options when they dine. We’ve seen an increase in demand for vegetarian and healthier tacos. When you're not coming up with delicious dishes, what do you enjoy doing in your spare time?

Eating, My family and I love food, we dine out as often as possible and try as much variety as we can.

What's next for you?

I hope to continue to grow my company in a responsible manner, lead the current taco revolution and find time to enjoy life with those I love!
